The pavlova

Spectacular, tall, covered in fruit, and structurally doomed. You promise more than your meringue can carry, and you do it on purpose, because a pavlova that doesn't crack as it cools doesn't exist — the fissures are part of the dessert and you learned to show them rather than hide them.
