The crumble

No pastry to roll, no tin to line, no technique: flour, butter, sugar and fruit that needed using up. You work with what's there, you always turn up on time, and you're the dessert people make most often and photograph least. Your one rule is not to overwork the butter, or the topping bakes into a slab instead of sand — you lose your charm the same way, by trying too hard to do it properly. What you should hear: being easy to live with is not the same as being interchangeable.
